The 10-minute kitchen cross-contamination checklist

I have audited a lot of kitchens, professional and domestic. The failures are always the same five or six, and they are all fixable in an afternoon. Work down this list in order; the top items matter far more than the bottom ones.

1. Separate the surfaces, not just the food

The single highest-value habit is to never let raw protein and ready-to-eat food share a surface in the same session, even with a wash in between.

In practice that means either two boards or a strict sequence: produce first, raw protein last, then the board goes straight into the dishwasher.

Colour coding is the easiest way to make this stick in a household where several people cook, because it removes the need to remember anything.

2. Wash at the right moment

Wash the board, knife and your hands immediately after raw protein — before the residue dries and before you touch a tap, a drawer handle or a phone.

Most kitchen contamination maps I have drawn spread through handles and taps, not through the food itself.

3. Do not rinse raw chicken

Rinsing poultry does nothing useful and aerosolises bacteria across your sink, taps and any dish left nearby. Public health agencies have been asking people to stop for years.

Pat dry with paper towel and bin the towel.

4. Retire scored boards

Scored surfaces cannot be reliably sanitised at home. Run a nail across the board; if it catches, replace it or move it to bread-only duty.

This is the item people resist most and it is the one that quietly undoes everything above it.

5. Dry everything properly

Bacteria need moisture. A board stacked flat while damp stays damp for hours; the same board standing on edge is dry in twenty minutes.

The same applies to knives, chopping mats and the sink itself at the end of the night.

6. Fix the fridge order

Raw meat on the bottom shelf, in a sealed container, below everything ready to eat. Drips travel down.

It takes two minutes to reorganise and it removes an entire category of failure.
