Plastic cutting boards and microplastics: what we know
Until a few years ago the case against plastic cutting boards was purely about hygiene. Then researchers started weighing what comes off the board during normal chopping, and the conversation changed.
Where the particles come from
A knife edge is a wedge. When it meets a polyethylene or polypropylene board it does not stop at the surface; it opens a cut and lifts a sliver of polymer. Most of those slivers stay on the board and get rinsed away. Some end up in what you were chopping.
You can see the coarse version of this with a dark-coloured board and a light-coloured onion. The fine version is invisible, and that is the fraction the research is concerned with.
The rate depends on how hard you cut, how sharp the knife is, and how scored the board already is. A worn board sheds more than a new one, which is the opposite of what most people assume.
What the 2023 research measured
A study published in Environmental Science & Technology in 2023 quantified microplastic release during chopping on polyethylene and polypropylene boards, and estimated household exposure in the range of tens of millions of particles per person per year of board use.
The estimate is exactly that — an estimate, extrapolated from controlled chopping to typical household patterns. Treat the order of magnitude as meaningful and the exact number as soft.
The same work found that chopping style and board material both mattered, which is a hopeful finding: this is an exposure you can substantially reduce by changing one object.
What we do not know yet
The health consequences of ingested microplastics in humans are still being worked out. There is a growing body of work detecting particles in human tissue, and a much thinner body of work establishing what specific harm follows at realistic exposures.
Anyone telling you the effects are proven and severe, or definitively nil, is ahead of the evidence in one direction or the other.
That uncertainty is precisely why the practical answer is easy. This is a cheap exposure to remove. You are not giving anything up by chopping on a surface that does not shed.
What to do about it
If you keep plastic boards, keep them sharp-knife-only, replace them the moment they are visibly scored, and stop putting them through the dishwasher at high heat, which accelerates surface degradation.
If you would rather not think about it, move to a non-porous surface that cannot shed polymer at all. Steel and titanium-surfaced boards fall into this category; glass technically does too, at the cost of your knives.
Either way, the important part is not to keep a scored plastic board in service because it still looks usable. Scored plastic is worse on both counts, hygiene and shedding, than the same board was when new.
