Why Tivano™ PRO won

I did not expect the winner to be the expensive one. I have spent fourteen years telling professional kitchens that the answer to a scored board is a new board, and for most of that time I used cheap plastic at home for exactly that reason: it is disposable.

What changed my mind was doing raw chicken on a non-porous surface for a week. There is no ritual afterwards. You tip the trimmings, rinse, and put the board in the dishwasher, and there is nothing left to think about — no scars holding protein, no grain wicking juice, no polymer slivers in the tray underneath.

The second thing was knife feel. I expected steel to be as brutal as glass. It is not: a dense, textured board absorbs the strike instead of bouncing it back, and my edges lasted noticeably longer than they did on the tempered glass board I had been using as a backup. The HexGrip texture also means it does not skate on a wet counter, which is the part cheap steel sheets get wrong.

The honest drawback is that you can only buy it from the official store. I would prefer it were on a marketplace with next-day delivery. But between a board I replace every year and one carrying a lifetime replacement warranty, the arithmetic is not close.

Which cutting board material is the most hygienic?

Non-porous surfaces — steel and titanium-surfaced boards — are the easiest to sanitise because there is no grain to absorb juices and no soft polymer for a knife to shave open. Wood and plastic both develop crevices that shield soil from detergent.

Do plastic cutting boards really shed microplastics?

Yes. Research published in 2023 measured particle release during ordinary chopping on polyethylene and polypropylene boards and estimated household exposure in the tens of millions of particles per year. The health consequences are still being studied; removing the source is cheap either way.
